A loving tofu scramble

This yummy dish is a staple for me. Delicious, filling and packed with all the good plant-based proteins. And even better…no sentient being was harmed in the making of it. 💗🙏✨

Ingredients:

  • 1/4 block of firm tofu

  • 1 roughly chopped tomato

  • 1/2 roughly chopped red onion (optional)

  • 3 large mushrooms (optional, not included in this rendition!)

  • 1 handful of spinach (fresh or frozen)

  • 1 teaspoon of: coconut oil, lemon-infused olive oil

  • 1 teaspoon of: herbamare salt, pepper, turmeric, paprika + cumin

  • 1 teaspoon of Nuttlex (optional)

  • 1 table spoon of vegan parmesan (from IGA)

Method:

  • Roughly chop onion + tomato

  • Cook off onion with olive oil and then add all spices

  • Add tomato and mushroom and then cook off

  • Roughly crumble tofu with clean hands and add straight to pan

  • Keep stirring and then add coconut oil and nuttlex for extra yumminess

  • Throw in the spinach 2 minutes before serving

  • Serve with hemp seeds on top and with pan cooked instant roti bread (optional and also from IGA - I toast it in a sandwich press)
